Peanut Butter and Chocolate Chip Baked Oatmeal Cups


- 3 cups rolled Oats

- ½ cup ground Oat Flour

- 1 teaspoon Baking Powder

- 1 teaspoon ground Cinnamon

- 1/3 cup dark Chocolate Chips

- 2 large Eggs

- 1 cup unsweetened Almond Milk

- 1 tablespoon Honey

- 1 large mashed Banana

- 1/3 cup Peanut Butter

- 1 tablespoon melted Coconut Oil


- Mix in a bowl the oats, oat flour, baking powder, cinnamon, chocolate chips

- Mix well together

- In a separate bowl put the eggs (beat them), add the almond milk, honey, banana, peanut butter and mix them using a whisk

- Mix both mixtures together

- Add coconut oil

- Place in a muffin tray

- Bake for 15-20mins

- Put some extra peanut butter on top to decorate (optional)
