Cinnamon Cookies

Ingredients:

125g pure ground almonds

½ tsp bicarbonate of soda

½ tsp vanilla

1 tsp cinnamon powder

1-2 tsp Stevia sugar

60g light soft butter

1 tbsp raisins or dark chocolate chips (or mixed)

Method:

-Preheat the oven to 190 Celsius.

-Line a baking sheet on a dish

-Combine the pure almonds, bicarbonate of soda and vanilla.

-Mix well and add the cinnamon powder, Stevia sugar and butter.

-Mix well together and add the raisins or dark chocolate chips (or both)

-Create 12 balls (depending on the size) from the mixture and place them on the baking sheet.

-Press the balls to create a flat cookie shape.

-Bake the cookies for 10 to 15 minutes or until golden brown.

-Remove them from the tray and let them cool down.

The Cinnamon Cookies will keep for serval days stored in an airtight container.
